Baked tofu Recipe By: Executive Chef Willie L Lewis CEC
Ingredients;
one 14 ounce block of tofu, cut into about 10 pieces
a quarter cup soy sauce (low sodium)
one tablespoon apple cider
a good squirt, maybe a teaspoon, of Sriracha or your favorite hot sauce
a good grinding of black pepper
a tablespoon of salsa (I used Pace Pico de Gallo
Add a bit of garlic if you like)
Make a Marinate for the Tofu
Instructions:
A few hours before you want to cook the tofu (or at least an hour ahead), mix all ingredients but the tofu in a small bowl.
Dip the tofu in the sauce, making sure all sides get well covered, and spread pieces out on a plate or baking dish.
Spoon extra marinade over the top, cover and refrigerate.
When ready to cook, heat oven to 500.
Arrange tofu on baking sheet, spooning a little extra marinade on each piece on any white spots you see.
Bake for 10 minutes or until edges start to get brown, flip and cook another five minutes or so.
The inside stays relatively soft and tofu like, add this tofu to a stir fry with vegetables or serve it on a bed of your favorite grain.
