What ACF certification means to an employer:
Certification is open to all culinarians, including chefs, cooks, bakers, culinary educators and administrators. There are 14 levels of certification, and each requires specific qualifications, in addition to knowledge of culinary nutrition, food safety and sanitation, and culinary supervisory management. It is fundamental to the certification program that work experience is equivalent to the level of certification.
ACF Certification Levels
ACF Certification - Initial
Candidates seeking initial ACF certification are required to have extensive work and educational experience, and pass a written and practical cooking or baking exam. They must also complete coursework in culinary nutrition, food safety and sanitation, and culinary supervisory management. Requirements vary for each certification level.

Once certified, chefs must periodically refresh their knowledge in specific competencies and provide documentation of professional development. Maintenance of ACF certification means that a culinarian has held steady employment and attended classes, conferences and or competitions, thus demonstrating dedication to his or her career and the desire to grow and excel.
ACF Certification - Renewal
ACF certification is valid for five years. Renewal of ACF certification varies according to the certification level. However, it is necessary to complete required refresher coursework in culinary nutrition, food safety and sanitation, and culinary supervisory management for all certification renewals.
